Taiyozakari: A Private Visit to Taiyo Sake Brewery in Murakami, Niigata

There are sake labels that announce themselves, and there are labels that simply exist, quietly, for the people who know where to look. Taiyozakari, made in the castle-town of Murakami on Niigata's northern coast, belongs to the second kind.

Murakami and a River

Taiyo Sake Brewery (大洋酒造) stands in Murakami City, in the north of Niigata Prefecture, and has been brewing since 1945. The brewery draws its brewing water from the underflow of the Miomote River, whose source lies in the Asahi mountain range — water shaped by snowmelt and mountain, which is much of what Niigata sake is about.

Murakami is a place where sake and the local landscape are closely bound. For a wider picture of the town, see our visit to Miyao Brewery and Shimeharitsuru, also in Murakami.

A Brewery That Keeps Experimenting

According to publicly available information, Taiyo was among the earliest breweries in Niigata to bring daiginjo to market. In recent years it has also taken up brewing with flower yeast: from 2019 the brewery began working with it, and in 2021 released a junmai ginjo made with strawberry-flower yeast. Part of its rice, a variety called Takane Nishiki, is grown in the terraced fields of Murakami itself.

It is a pairing of old and new that suits a brewery of this size — rooted in a local river and local rice, and quietly curious.

Visiting With Wintage Tour

A Wintage Tour visit to Taiyo Sake Brewery is arranged privately and in English. What can be experienced depends on the season and on what the brewery is doing on the day — so each visit is shaped around the time of year, and we offer as many experience elements as that moment allows.

Depending on the timing, a visit may include time to see where the sake is made, a tasting, and, where possible, a conversation with someone from the brewery. Details are agreed beforehand and confirmed with you before you travel; schedules can change with weather and the brewing calendar, so nothing can be guaranteed in advance.

Making It a Niigata Day

Murakami works well alongside other Niigata visits. Our guide to Niigata sake offers the wider context, and Niigata in winter explains why the colder months suit a brewery visit. If you are new to the subject, How Sake Is Made is a good place to start.
