Tsunan Sake: A Private Visit to Tsunan Brewery in Niigata's Snow Country

Some of Niigata's snowiest country lies up the Shinano River valley, in the town of Tsunan, in the Uonuma region. Winter here is not a backdrop. It is the condition under which the sake is made.

A Brewery Founded by the Community

Tsunan Brewery (津南醸造) was established in 1996 in an unusual way: local rice growers, the local government and the agricultural cooperative came together to found it. The aim, as the brewery describes it, was to make use of rice grown in Tsunan and to help sustain local agriculture. It is a sake brewery that grew out of a farming community, and that is evident in how it speaks about itself.

Snow, Water and Rice

Snowfall in Tsunan can reach two to four metres, and the brewery describes being wrapped in snow through the winter. That steady cold is part of the brewing: low, consistent temperatures help make fermentation easier to manage, and winter brewing at low temperature is associated with a smooth, soft style of sake.

The brewery's labels include Tsunan Shiro, made with Gohyakumangoku rice polished to 40 percent, and Tsunan Ai, known for its calm aroma. To understand what the cold does to sake more generally, see Niigata in Winter.

Visiting With Wintage Tour

A Wintage Tour visit to Tsunan Brewery is arranged privately and in English. What can be experienced depends on the season and on what the brewery is doing on the day — so each visit is shaped around the time of year, and we offer as many experience elements as that moment allows.

Depending on the timing, a visit may include time to see where the sake is made, a tasting, and, where possible, a conversation with someone from the brewery. Details are agreed beforehand and confirmed with you before you travel; schedules can change with weather and the brewing calendar, so nothing can be guaranteed in advance.

Because Tsunan is a snow-country town, access and conditions depend heavily on the season; we plan the day around that.

Pairing It With Other Uonuma Visits

The Uonuma region is home to several of the breweries we write about, including Hakkaisan and Aoki Shuzo. For the bigger picture, our guide to Niigata sake is a good starting point.
